Hazelnut Cookies with Vanilla and Cocoa Rosemary Buttercream

A few days ago I woke up to heavy rain pelting down outside. Being my day off, I rolled over and snuggled right back into my wool blanket to catch a few more hours of shuteye. 

A heatwave has been upon us and the heat and I are not the best of friends. I thrive under cloud cover and cold rain, whereas I melt, shrivel and hide in the heat. No matter how much water I drink, my body does not want to cool down. It is quite fun I must say. 

In addition to that, the thought of turning on the oven during a heatwave makes everyone in my household just collapse right on the spot. So naturally, when I woke up to the sound of rain it was like the most exciting day of my life! (Okay maybe not that exciting now that I think about it, but at the time it sure was!)  

Of course I turned on that oven of mine, made myself a cup of tea, adorned my wool sweater and fuzzy slippers and spent a very happy day in the kitchen. It was like a tiny taste of the coming fall, and it would be I lie if I said I wasn’t overjoyed. 

There’s something so wonderful about spending the entirety of a dreary cold day by the warmth of an oven. Especially if you are waiting for these magical Hazelnut Cookies to come out of the oven.

We are now back to the usual summer heat and I am back to my usual melting summer self. Until the next much anticipated dreary day, my sweater and slippers will remain back in the closet.


Place 2 TB of butter in a small pot with a few small sprigs of rosemary. Boil butter for about a minute, until fragrant. Let butter cool and set (with rosemary in) for an hour on the counter.

Remove rosemary sprigs and discard. 

In a small bowl beat together rosemary butter and 2 TB more of regular softened butter. Add in 1 cup icing sugar, a dash of vanilla extract and enough milk so the buttercream comes to your desired consistency.

Remove half the buttercream and place in a separate bowl. Stir in 1 TB of dutch processed cocoa powder and there you have it! Delightful Cocoa Rosemary Buttercream!

Pipe vanilla rosemary buttercream on cookies using a small round tip, and follow with a star of cocoa rosemary buttercream on top of that.

Happy Canada Day to all my fellow Canadians!! +anybody else who feels like a wonderful red and white celebration today 🙂

My family kicked off the celebrations with some delicious whole wheat scones (a la Mom) topped with whipping cream and raspberries!! Yummmyyy I can still taste them as I write this!

Then of course more celebration ensued when Milos Raonic (a wonderful Canadian tennis player) won his match at Wimbledon this morning! Go Canada Go!



Sadly I have to spend most of my day working in the cafe, but luckily the fireworks are being shown right over the lake directly in front of me so I won’t miss them!
