Super Easy Chocolate Walnut Fudge

Lets just start off by saying, “IM SORRY, I KNOW I HAVN’T POSTED IN LIKE….YEARS”. Wait…more like since November 30th, but for all intents and purposes its been years. Being honest, I’ve been avoiding the blogging world the past few weeks…and yes, I did just say, “Avoiding the blogging world”.Β 

Since its the holiday season, every single day my Bloglovin has 3000 new posts for me to read, and I know I don’t have to read all of them, but I just feel obligated you know? Cause if I’m following someone I want them to know that it’s because I truly care about what they post and actually read it! It’s not just one of those, “I want to follow you because I want you to follow me”, sort of situations. Lots of quotations are going on here I see… πŸ™‚

It’s just that every single post I see is some new holiday entertaining idea, or, “The Best Way to Cook Your Christmas Turkey”. Then theres me just sitting there thinking, “So…every single one of you knows the absolute best way to cook a Chirstmas turkey…something doesn’t seem right here…”. I know everyone has good intentions, it’s just that when there are 3000 people with good intentions it kind of overwhelms me. I JUST WANNA DO MY HOLIDAY MY WAY OKAY!!Β 

This is the reason I stopped my ‘At The Table’ series if any of you were wondering. I realized that i didn’t want to see one more post about the best table cloth to use for Christmas dinner, and I was like, “Wait! I totally did that!” So I just had to stop.Β 

Holiday traditions are different for everybody, and I just want to enjoy my holiday, without worrying about giving other people ideas on how to do their holiday.Β

Sorry, rant over…TIME FOR FUDGE.

This fudge is so easy its not even funny. Well, it is kind of funny actually…ha…haha…ha

A candy thermometer is not even needed! The reason why/magic ingredient? MARSHMALLOWS. Just pointing something out, I have always thought marshmallows should be spelt with an e. LikeΒ marshmellows,Β cause that is how you pronounce it! Right? Or thats just how I pronounce it cause I’m so awesome…ha…ha

ANYWAYS, I’ve made this fudge as Christmas gifts for countless years, with my mother when I was younger, and now by myself. (Cause she trusts me with melting marshmallows…I think….most likely not)

I think this chocolate walnut fudge is damn delicious, but I’ll let you make it to form your own opinion πŸ™‚

CHOCOLATE WALNUT FUDGE-Martha Stewart

  • 1 3/4 cups mini marshmallows
  • 1/2 cup heavy cream
  • 1 cup sugar
  • 1/2 TSP salt
  • 3 TB unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 TSP vanilla
  • 3/4 cup chopped walnuts

Line a loaf tin with parchment or waxed paper. Spray with cooking spray or brush with butter. Set aside.

In a heavy bottomed saucepan set over medium heat, stir together marshmallows, cream, sugar, salt and butter. Stir continuously until marshmallows are almost melted, about 5 minutes. Bring mixture to a boil, and stirring occasionally, boil for 5 more minutes. (The mixture will darken a little bit, smelling caramelizing like)

Take off heat and stir in chocolate chips and vanilla. When chocolate is melted and completely incorporated, stir in 1/2 cup chocolate chips. Pour mixture into prepared loaf tin and sprinkle with remaining chopped walnuts.Β 

Let set at room temperature for at least 3 hours to set before cutting into squares.

Sometimes, it overwhelms me too and I have to step back and prioritize for I do have a family to take care of. I blog whenever I can and want. It’s no contest.
